I don’t know about you, but when the temperature drops this time of year, there’s nothing more comforting than a warm, homemade apple pie. This nourishing twist on the classic apple crumble pie brings together those nostalgic flavours with functional ingredients designed to support gut and skin health. Infused with Chief Creamy Vanilla Collagen Powder in the crust, filling, and crumble, each slice offers a gentle protein boost without compromising on indulgence. With its golden almond-based crust, spiced apple filling, and crunchy nut topping, this gluten-free dessert is best enjoyed warm with a generous dollop of coconut yogurt or your favourite cream.
1 ½ cups almond meal
¾ cup gluten-free plain flour
2 tbsp Chief Creamy Vanilla Collagen Powder
Pinch of sea salt
7 tbsp almond milk
5 large apples, cored and sliced
1 tbsp organic ground cinnamon
½ tsp organic ground ginger
2 tbsp Chief Creamy Vanilla Collagen Powder
2 tbsp coconut sugar
Pinch of sea salt

1 cup almond meal
1 tsp organic ground cinnamon
1/3 cup organic butter or ghee [room temp]
1 cup walnuts or pecans, roughly chopped

Preheat your oven to 180°C (356°F) and lightly grease a 20cm (8-inch) pie dish or tart tin.
To make the pastry, combine the almond meal, gluten-free flour, Chief Creamy Vanilla Collagen Powder, and a pinch of sea salt in a medium bowl. Gradually mix in the almond milk until a soft dough forms. Press the dough evenly into the base and sides of the prepared dish, then prick the base lightly with a fork. Pre-bake for 10 minutes, then set aside.
While the crust is baking, prepare the filling by tossing the sliced apples with cinnamon, ginger, collagen powder, coconut sugar, and a pinch of sea salt until well coated. Once the crust is out of the oven, layer the apple mixture evenly into the base.
In a separate bowl, make the crumble topping by combining coconut sugar, collagen powder, almond meal, cinnamon, and sea salt. Add the room-temperature butter or ghee and rub it through the dry ingredients with your fingers until a crumbly texture forms. Fold in the chopped nuts, then sprinkle the crumble evenly over the apple filling.
Bake the pie for 30 minutes, or until the topping is golden and the apples are soft and bubbling. Allow to cool slightly before slicing and serving warm. Enjoy on its own or with a spoonful of coconut yogurt or cream for an extra decadent touch.
