These Gluten-Free Collagen Crackers are packed with nutrient-dense ingredients like buckwheat, almond meal, and Omega seeds, making them a powerhouse protein-rich snack. With the added benefits of ourUnflavoured Collagen Protein, they offer a unique way to support your skin, joints, and gut health—all in a crunchy, savoury bite.
We especially love serving these crackers with our Creamy Guacamole with Biltong for the ultimate combo of healthy fats, protein, and flavour OR wild-caught mackerel, with bone broth mayo and lime. Whether enjoyed on their own or paired with your favourite dips, these crackers are easy to make, store beautifully, and will quickly become a staple in your pantry.
1 ½ cups buckwheat flour
1 1⁄2 cups almond meal
1 cup Omega Seeds Mix
⅓ cup good Unflavoured Collagen Protein
¼ cup fennel seeds [optional]
1 tsp chilli flakes [optional]
2 tbsp extra-virgin olive oil
1 1⁄2 cups of filtered water
1 tsp sea salt
Preheat oven to 160°C (320°F) and line a baking tray with baking paper.
In a large bowl, combine buckwheat flour, almond or sunflower meal, Omega Seed Mix, collagen, sunflower seeds, fennel seeds, chilli flakes, and sea salt.
Add olive oil and water. Mix until a thick dough forms. Spread mixture evenly onto the lined tray, about 5mm thick. Score into cracker shapes with a knife.
Bake for 35–40 minutes or until firm and golden. Cool completely before using your hands to snap into crackers.
Store in an airtight container for up to 3 months.
